Once the residence of a noble goldsmith, the Rosselli house is a clear example of living history. On arriving at Merchant Street, look up at the stately façade of the building and take in the typical architecture of houses that were once the homes of nobility in Valletta. Step inside the hallway and let your eyes wander to the central courtyard, home to an original 400-year+ old fountain, restored to its former glory.
Designer Rooms & Suites
The palazzo’s Piano Nobile, the principal floor that would have typically served as the main living and sleeping quarters of the house, now contains one each of the five designer rooms and suites. From each of these, you may enjoy resting time by looking out of a traditional wooden Maltese balcony. With side sea views gleaning over the Valletta rooftops, or views that overlook the old University and the dome of the Jesuit Church situated nearby, all the way down to Merchants Street, take in the city life from your serene lookout.

Maruzzo – Comfort Rooms
Boldly aesthetic embodying most of the house’s architectural motifs, the Maruzzo’s designers used rich textures to great effect to finish this elegant dialogue between old and new.
Mezza Croce – Deluxe Rooms

Alusietta – Superior Rooms
The Alusietta rooms are a tribute to elegance and discretion. Arched doorways and dark floral motifs capture the essence of a passionate, elegant and discrete lady whose presence captivated those who crossed her path, not least Pietro Rosselli.
Don Pietro – Executive Rooms
Set in the calm atmosphere of the Palazzo’s courtyard, and flanked by the hotel’s arched colonnade, the suites aim to take guests to a moment of calm and contentment, away from the busy city.
3 Herons – Junior Suites
These duplex rooms pay homage to all that Rosselli has been able to achieve during his life and reflect Valletta’s architectural grandeur. Located at the Piano nobile, with private access to the sleeping quarters at mezzanine level, the 3 Herons suites grant complete privacy.
Sixteen 34 Suite
With a dedicated private working lounge and interconnected sleeping quarters, this suite is the pride and joy of the Rosselli team and has hosted numerous VIPs who wished to combine business efficiency with comfort and beauty.
Grain Michelin Dining Experience
Curated Michelin Star Dining
Dining out is a ritual that the Maltese have perfected. Testimony to this is the sheer number of restaurants dotting the Island. But there is one restaurant that stands out from the noise, to offer an unrivalled, exceptional dining experience.
Inspired by the tailors of old whose workshops were located on Merchants’ Street, a few paces away from Rosselli, the restaurant was given the name of Grain. Like a tailor, the chef is skilful with his hands, and his artistry in reflected in the finished product. When cutting fabric, a tailor cuts along the grain to make sure the material does not fray – in the same way the chef works with grain to produce dishes unique and exquisite in taste and presentation.
The interior design of the restaurant showcases details from the tailoring profession like sewing machines and old portraits of Maltese tailors. From the design of the menu that features a sewing pattern, to the use of tailor’s calk to mark chosen dishes, the bill that comes pinned to a pin cushion and the circular wall lights reminiscent of thread spools, no effort has been spared to elevate dinner into an immersive experience.
Under Grain
The flagship haute cuisine restaurant Under Grain is one of the first of only five restaurants to clinch a MICHELIN Star on the island just five months after opening in 2020 and has retained it for two consecutive years. Under Grain promises its gourmands a refined dining experience where premium dishes prepared by Executive Chef Victor Borg are matched equally by the designer ambience and service excellence, bringing you an all-round exceptional experience.
Grain Street
A fashionable and convivial eatery offering flavour-loaded plates designed to share in stylish interiors or al fresco in the heart of Merchants Street. Tuck into colourful and appetising spreads, worthy of the MICHELIN Bib Gourmand accolade paired with the finest of wines all served by the glass or by the bottle.
Over Grain
Set on the rooftop, Over Grain is an innovative, exclusive and luxurious space floating above the Valletta skyline. Boasting uninterrupted views of the capital and beyond, Over Grain showcases the timeless beauty of the city as you sip on signature cocktails high above the rooftops.
Private
Our private room, designed with a separate entrance access through St Christopher Street, is ideal for corporate and executive meetings combined with a MICHELIN-rated lunch or dinner. In addition, the private room can be used to commemorate special moments with family or friends in a dedicated space. Pre-booking is required.

The Rosselli Lounge
After a busy day exploring the Island, unwind in The Rosselli Lounge at the heart of the palazzo, an internal closed courtyard with a magnificently restored 400-year-old+ authentic fountain, original to the house. Relax in the soft sofas and let the soothing sweet tinkle of water lull you. If you want to talk shop, the quiet calm of the lounge area is perfect for concentration and business conversations.
Outdoor Pool
Sip a Moscow Mule by the plunge pool’s edge, relax with a book or magazine or just close your eyes and take in the warm Mediterranean sun. When it gets too hot take a refreshing dip in our splash pool located on the higher level of Rosselli. Let the cool waters wash over you while admiring the stunning views of Valletta’s urban city skyline.
